Sirloin steak salad

4 x 250g sirloin steaks

275g salad greens: baby spinach, watercress, mustard & cress, cos lettuce etc.
6 red baby tomatoes
6 yellow baby tomatoes
12 radishes cut into thin discs
½ cucumber cut into small dice
6 spring onions cut into rings
2 oranges, peeled & segmented
Coriander, chopped
2tbs olive oil

2 cloves garlic, crushed
5cm root ginger, finely grated 2 small red chillies, de-seeded & finely chopped
1tbs red wine vinegar
1tbs chopped fresh parsley 2tbs extra virgin olive oil

Serves 4

Combine the dressing ingredients. Toss the salad ingredients and place in a deep bowl.

Remove any excess fat and season the steaks well with sea salt and black pepper. Cook on a hot griddle for 2–3 minutes each side. Remove from the heat, rest, and slice the steaks into strips. Pour the meat juices onto the salad and arrange with strips of steak on top. Serve the steak warm.
